Homemade Tomato Soup
Ingredients:
2 tablespoons of olive oil
1 medium onion, chopped
2 cloves of garlic, minced
1/4 teaspoon of red pepper flakes
2 cans of whole peeled tomatoes (28 ounces each)
1/2 teaspoon of salt
1/4 teaspoon of black pepper
1/2 cup of heavy cream
1/4 cup of fresh basil leaves, chopped
Instructions:
Heat the olive oil in a large pot over medium heat.
Add the onion and cook until it is soft and translucent, about 5 minutes.
Add the garlic and red pepper flakes and cook for another minute.
Add the tomatoes, salt, and black pepper and bring to a boil.
Reduce the heat and let the soup simmer for 15 minutes.
Remove the soup from the heat and let it cool slightly.
Use an immersion blender to puree the soup until it is smooth.
Stir in the heavy cream and chopped basil.
Serve hot with your favorite bread or crackers.
