Cloud berry jam - well kinda

in foraging •  7 years ago

I attempted to make jam from the clouds berries we foraged for.

So I will tell you right now I can’t make jams or jellies for squat! They are always watery.

But I will tell ya how I attempted anyways, lol

I always guess when I cook so I sorted my berries and added a splash of water. I cooked them over medium heat.

Once they are starting to beak up...

...it’s time for a tato masher

After they are all mashed up good. It’s time to strain out the seeds.

I got what looked like mashed baby carrots/sweet potatoes after straining out the seeds.

Look at how many seeds!

Anyways, you return the strained berries/baby food to the stove. Add your sugar and pectin.
Becareful not to burn the berries, I almost did.

Put the jam/jelly into jars, wipe the rim. And water bath them for 15 minutes.

I didn’t use any special recipe, I followed my husband directions on “just add sugar and pectin”.
No I didn’t measure.
Yes my kids LOVE it and first thing in the morning they had a very messy PB&J.

My jams and jellies come out the same way; always have.
I use the Sure-Jel packets and I puree the berries- I don't care much for lumpy jams/jellies. I like mine smooth.

But I have grown so used to the consistency... that ANY store bought jam is too thick for me.

NOTE- the thinner jams and jellies make GREAT ice cream toppings too!

At least I’m not alone, I even do the cold spoon test and it seems just right. But once it’s jarred, nope.😕
Some of the store bought jams and jellies are VERY thick. I normally wish them with a fork then use them.
Texture isn’t a problem for me, thank goodness, or I wouldn’t be able to enjoy marmalade.😋
I wouldn’t have thought of the ice cream topping, that’s a good idea!

Nice going! Wow I have never heard of cloud berries. What are they!?!? I must go look this up now :)

Creation and canning food.. That's one of my lacking skills.
Looks like they turned out good for you. The proof will be in the eating and longevity, but they sure look like a pro-job.

How do cloudberries taste?
I know that's a tough question to answer with words, haha,
but I mean, it's a whole new berry I've never heard of so I can't stop wondering.

Sweet and tangy, kinda like a sweet and sour sauce. It’s flavor changes as you eat it. It’s quite strange and very unique.
