How to do it ?

you need a Camembert !

Of course nowadays finding a raw milk Camembert isn't very easy. But I tried this one which isn't raw :(.

As you can see, there are different level of maturation. Most people made fun of me when I said that I prefer really fresh Camembert, fresh in the sense that the middle part is still not melting, harder, even crispier... blah blah, you don't know Camembert, typical Parisian arrogances. But once I met an old lady from Normandy that told me that she too preferred it "platered" as is the name of fresh Camembert in the area. I was overwhelmed with joy ! finally another connoisseur.

but back to the burger...

it was just the heat from the hot bread, but if you never tried, hot camembert... is something very cool, specially when the camembert is fresh, and that the hard middle part stay hard while the edges (not the crust) melt... miam miam...

Marvelous ! So any opinions on french cheese? raw milk french cheese? ever tried it? dare to say no :D.

Ah, yes. I'm lucky enough to live in Taiwan, which doesn't have so many self-righteous busybodies eager to "protect" me from tasty food. Alas, Taiwanese don't care so much for real smelly French cheese, so unpasteurized is but an occasional treat.
