Freeze drying / lyophilization is advancement in conventional dehydration process to preserve food products such as coffee, or fruits like apples for as long as possible. This dehydration process is essential for logistics like transport of perishable food supply. The new process, also known as cryodesiccation, or lyophilisation involves lowering the temperature of food products with freezing the product, and removing the layer of ice with sublimation later. The high commercial value of agricultural products like Coffee, and Apple makes promises tremendous growth for the freeze-drying / lyophilization amidst rising uncertainty due to coronavirus. For example, Apple is one of the most valuable products, giving rise to household favorites such as Apple pie, in key markets like North America. The Apple sales alone reached over $15.60 bn in 2017. Moreover, the crop has overtaken even the likes of Strawberries in terms of total sales in Italy. The seasonal nature of products, and their high commercial value, and challenges in supply chain promise to drive growth for the freeze-drying / lyophilization market.
