Made it For friends who love fried chicken.
Ingredient
1 kg chicken wings separate into drumette and mid wing with tip intact.
1 teaspoon pepper seeds
2 tsp coriander seeds
5 coriander root
2 tbsp garlic
1 tsp cumin powder
1 tsp sugar
1/2 tsp salt
3 tbsp fish sauce
3 - 4 tbsp Tempura flour
10 shallots, finely sliced
suitable amount of oil for deep frying
Preparation
Step 1
Wash the chicken wings and tap dry. Put in a mixing bowl. Using a fork,
give it a few pokes to allow spices to penetrate into the meat and evenly cooked.
Add the pepper, coriander root, coriander seeds and garlic in the mortar and pounded together thoroughly.
Then put them in a mixing bowl. Add cumin powder, sugar, salt and fish sauce, mix well.
Then marinate chicken for at least 2 - 3 hours in the refrigerator.
Remove the chicken from the refrigerator. Add Tempura flour and few ice cubes mix well.
Step 2
Set the pan, add 1 liter of vegetable oil to the pan, use medium low heat. Add sliced shallot to fry to yellow.
(You will need some patience while frying the shallots and be careful not to over fry it as it will turn bitter)
Then drain the oil up. Set aside for later use.
Add chicken to fry until crispy. Increase heat before turning off the gas for 1 minute to expel the oil.
Then drain the oil up.
Serve on the plate and sprinkle with fried shallots. Ready to eat.
