Peaches and Blueberries! Oh My!


Did I tell you how much I love peaches? Well, I do! Unfortunately I rarely find good peaches!


But this week…. I got lucky!


Happy Monday my Fruits and Veggie friends! I hope you all had a few moments for rest and relaxation this weekend. No time for rest at the Bird house, we’re prepping for a week with a lot of visitors! That’s fine with me, it just gives me another great opportunity to share delicious, healthy treats with friends.


Thanks to @lenasveganliving for creating this wonderful community of healthy folks who love sharing fruits and vegetables! Although she’s handed the hosting role to @plantstoplanks, I know she’s still cheering all of us on from the sidelines! Both of these amazing ladies are so inspiring and creative, I have learned so much from both of them in just. Many thanks!! We have a great guest judge this week @lizelle. She makes magic in the kitchen, so glad she joined us!

Blueberry Peach Delight


Actually, I’m not sure which I like more, Blueberries or Peaches! I nervously purchased 5 fresh peaches last week at the market. I knew I was taking a risk!


When I got home, I sliced one of the peaches and took a bite, oh my!


Peach-ilicious

  • Gluten Free Flour (1 ½ cups)
  • Baking Powder (1 tsp)
  • Baking Soda (1/2 tsp)
  • Dairy Free Butter (2 tbsp.)
  • Maple Sugar (3/4 cup)
  • Flax Eggs (2)
  • Vanilla (1 tsp)
  • Coconut Yogurt (3/4 cup)
  • Fresh Peaches (2)
  • Fresh Blueberries (1/2 cup)

The Peaches…


were the first to slice. Wash, peel and slice these nuggets of goodness! Of course I had to taste them again.

Blueberries…


were next in line. Wash them thoroughly! Blueberries, packed with antioxidants, yum!

Sift, sift, sift…


all of the dry ingredients together in a bowl. Set aside for later. Now mix the butter, flax eggs, vanilla and yogurt on low speed with your mixer. When everything is well combined and creamy gradually add in the flour mixture. Mix until just combined. You don’t want to over mix with gluten free flour.

Pour that Dough…


into a small spring-form pan. Arrange the peaches on top and then surround the peaches with lots of Blueberries I like to press them into the dough and then add more on top! Bake at 350 for 50 minutes or until an inserted knife comes out clean.

Now I know…


you want to dive into this lovely delight but Nope! You have to let it cool for at least 30 minutes to an hour! Just walk away…you can do it!

This looks absolutely fabulous @birdsinparadise ! What do usually gluten free flour consist of? almond powder? Can we make those from scratch?

You can certainly make it from scratch! Almond flour would work, the cake might be a bit heavier. Most gluten free flours contain brown rice flour, potato flour, xanthum gum. Thank you @littlenewthings, I'm so glad you enjoyed the post today :) Have a great week

I would never give up on you! Life is good, we just got mountain bikes so we’ve been out discovering some biking trails. I’m such s beginner though… haha. Hopefully I can get back with fruits and veggies soon. I tell ya the days here are busy doing nothing but waking up to smell the coffee 😉

You are killing me Mrs.Bird!!! Oh my goodness, what a dreamy delight you have created. I you know peaches are one of my favorite fruits too and I know exactly what you mean when you say about being unlucky with them, lol. Well what I learned is that they are good only when they are in season and only for very shirt time. That is at the end of July beginning of August here in Canada. Nevertheless, your dessert is all I want right now anyway my Dear, lol 🍑😍🍑

I know, I haven't figured out what the "season" is here. It's all backwards compared to the Midwest portion of the US. (Roses bloom Nov-May here, go figure) Needless to say, I was pleasantly surprised to have these peaches. They reminded me of eating peaches during the summer when I was a young girl. Your season for peaches is really a short period. You have to watch for them and scoop them up fast! lol I'm so glad you enjoyed the recipe. It's a perfect breakfast cake with tea :) I hope your hand is healing nicely! Be well my friend

😵 😵 😵 😵 oohh help me @birdsinparadise, I almost fell off my chair because I want to stay away from this crazy delicious delight. I almost crying just by looking at the picture.. when will I have a chance to taste something like this in my life? i don't know flax egg, never seen maple sugar and where to find dairy free butter too.. LOL, I should get out from my neighborhood if I want to try more International foods.

Oh this is something that I actually could look into @bidsinparadise! I recently tried to make gluten free pancakes with whey protein and egg as a binding agent, which somehow kept getting pretty hard and dry even though I have added olive oil into the mixture. So I suppose the coconut yogurt is the one that is keeping it moist? Are there other types of yogurt I can try on?

I can still try this non-vegan version yes? Or will eggs spoil the taste?

yes, yes coconut yogurt is keeping this nice and moist. Any greek yogurt would work but I used coconut because it is dairy free. You could use eggs ipo the flax eggs if you wish,it won't hurt the taste at all. Just be sure you don't over-mix. I haven't used whey protein with my pancakes but Oat flour, coconut flour would be light enough for pancakes. I hope this helps a bit! Have a great week :)

I've already been dreaming about strawberry picking (which is only a few months away!), but now you've got me anxiously awaiting peaches further down the line! I wish I had a piece right now for breakfast. Because of course it is healthy enough to start out the day! Those friends of yours are quite lucky to have you as a hostess!

I know, I thought about you when I found these peaches. Can't believe how good they were, what a gift! And...I just found out a bout a U-pick orchard about 30 minutes from my home.
