A Glimpse at What's Cooking This Week for #fruitsandveggiesmonday!

It's that time again--#fruitsandveggiesmonday with the always fabulous host @lenasveganliving!  This was one of the first challenges I joined in on here on Steemit, and I always enjoy it.  Lena makes it very easy to spread some plant-based cheer--just post some gratuitous fruit and/or veggie pictures and make sure to keep it all about the plants!

I have been trying to come up with at least one original recipe a week since I started blogging, but this week I'm taking a little break to let inspiration strike again.  So today I'll just give you a little peek into what we've got in the kitchen to munch on this week.

When you live with an artist, you will randomly find the fruit bowl like this...

Thanks to @dksart for making our fruits look even more appetizing than normal. ;)  We try to eat as seasonally as possible, but bananas are a tough one to give up even during the fall and winter.  I try not to beat myself up too badly as I do pretty well on most other things.

Like this lovely (and large!) butternut squash from the farmers market last week.

This guy got roasted with some beets and mixed into a salad with French lentils and lots of leafy greens for lunches this week.

@dksart is nice enough to harvest the seeds from some of our squashes to see if we can get some growing in our own garden.  For some reason we haven't quite cracked the code on succeeding at a fall garden, but we keep trying!

As always I can't wait to see what everyone else has cooking this week!  :)

Usually, winter squash are grown during the summer. They are called winter squash because you can keep them in storage during the winter....

Excellent point Marianne! That may be part of our gardening problem--I think we start too late in the summer. The bugs have been so bad here this year, though, so anything we planted during the summer got eaten up!

Hmm, next year, you might try some companion planting to confuse the bugs and tunnels also help with that....

Thanks for the tips! Until then at least we have a really fantastic farmers market right near us with lots of local farms represented! :)
