Fruits and Veggies Monday--Time for Another Peek into the Kitchen! ;)

Hey guys!  Happy #fruitsandveggiesmonday!  The lovely @lenasveganliving always has a great roundup with tons of really fun submissions every week.  If somehow you have missed out up until now, take a few minutes and join in!  It's one of my favorite contests. :)

I am going to continue my trend this time around with another peek into what I've got cooking.  It seems like everyone enjoys seeing some of my meal prep.  I hope it has helped give you some ideas on how to keep up your own healthy meals throughout the week!

One veggie I've included this week is leeks.  I don't use them a lot, but it is always a nice change when I do.  They function a lot like regular onions, but have a slightly milder flavor profile.  They are high in vitamin K and contain a number of antioxidants that are good for cardiovascular health and supports your immune system.

I used them in a root veggie soup that I cooked in the pressure cooker.  I made a few changes, but the recipe came out of the "Vegan Under Pressure" cookbook by Jill Nussinow.  The other lovelies that I used in the soup were parsnips, celery root (celeriac), and turnips.  I also threw in a purple sweet potato.  The original recipe calls for a Japanese sweet potato which has white flesh, but I thought it would be fun to throw in the purple one to see if I could get a lavender-colored soup. ;)

Of course I had to wait while the soup cooked to see what the final outcome was...

Success!  I thought it turned out quite pretty, and @dksart thought it was delicious.  A win on both fronts!  I have plenty jarred up for the next few days to eat along with some buckwheat and black bean savory muffins.  These were also a new recipe that turned out better than I thought, so I will be sharing that soon!

I also used some pretty purple kale and peppers in my tofu scramble that I posted yesterday.  You can never get enough gratuitous veggie pics, so here's the original products before they turned into my yummy breakfast for the week.

And here the scramble is ready to pack and go for breakfasts this week...

I have one final meal to cook up this evening.  A spinach and chickpea curry recipe from another of my new favorite cookbooks.  I will definitely add another cookbook review this week, as well!

I'm working on writing it up! I would also like to test it out as a bread, too, so I need to get some more buckwheat flour. Hopefully I'll have it up in the next few days. :)

Oooh !! leek!!!! I've been looking at it for a long time but I did not know what to do with it :)))) it's a wonderful idea to use it in soup. Thank you so much!!!! your soup is amazing in appearance. he reminds me of smoothies made of papaya and dragon fruit with bananas :))))

It does look like a smoothie! It's slightly sweet, but in an earthy way. :)

It's been a long time since I made leek soup, which was one my favorites when I was growing up. However, the one my grandmother used to make was just a simple potato leek soup. Yours on the other hand is quite a creation. I can smell the veggies cooking through the screen and I love the purple color.

I don't like how organized you always are, lol...Those ready to eat bowls and jars would be wonderful today as we are expecting another 4 inches of snow by tonight!

I imagine curved up in a blanket, and have a bowl of warm soup in hands!

Haha, I only am after many years of practice! Plus, the way my schedule works I would sometimes be stuck without food if I didn't prepare ahead. Nobody likes a hungry trainer, so I try to keep well-fed to be nice to my clients. ;)

No snow down here, but it's been cold enough! Soup is definitely helpful this winter!
