I have replaced rice with pearl barley it really helps with by insulin spikes. I don't have diabetes but am pre diabetic cause I am overweight. So Just swapping barley takes care of the symptoms and even if I don't exercise or restrict my diet substantially I lose weight. I have been missing sushi. I was wondering if barley would make a good substitute for sushi too you answered my question.
The concern I have is that the barley I make is a little too watery so should I dry out the water it is slightly slimy not very much. I wish there was a video of you making it so we knew exactly how much to boil. The pearl barley here takes a lot of time to boil.
I have managed to make kichadi(its like an Indian rissotto) with it and am planning to make a biryani too but am not so keen as it is very oily but a sushi would be very healthy.
Thank your for sharing this now i have the confidence to make it. Also I am planning to get a heart shaped sushi mould. It looks damn easy I think its s safer bet than rolling(I do roll sushi and have a rolling mat) atleast to start with .
