Why does no one talk about parsnips

I have been watching what vegetables people are planting and I am not seeing anything about parsnips. These are delicious and I feel sad no one is talking about them.

Parsnips can be used like carrots. They are sweeter than a carrot,but harvest after the first frost. They can be boiled,baked,roasted or fried. You can use them is soups or stews. My favorite is boiled and then fried in butter.

If you have never tried parsnips you should really give them a try.

I agree parsnips are delicious especially with this herbal salsa on top. Serve mashed parsnips with this green salsa on top. 2 tbsp chopped flat leaf parsley, 1tbsp chopped capers, 1tbsp chopped chives, 2 tsp fresh chopped thyme leaves, 1/2 tsp lemon zest, sea salt, ground black pepper and 3 tsp olive oil. Enjoy!

I've never tried parsnips before. They are interesting looking things.

Great post, I hope more people give parsnips a try! I use parsnips, a lot of parsnips and I put it in just about everything. It's one of my favourite vegetables and I also grow them in my garden. Roasted in some olive oil with carrots and beets and a little honey are the best!

ahh, good you mentioned it!! Parsnip is my favorite winter veggie - have two long rows of them in the garden and along with black salsify they are harvested in the late fall and winter season... but I have to admit, I already took a couple out to make some veggiesoups a little richer with variety ;-) My favorite is pure parsnip soup with fried bacon slices! cheers from the seven mountains in Germany
