Today's Sustainable Feast in the Garden of Eden

It is a fantastic day in the Garden of Eden, and we are giving thanks for more than enough of everything in this abundant life of freedom!  


We made a delicious feast for our full time volunteers on our indoor wood burning stove rather than on the rocket stoves of our sustainable outdoor kitchen. We stayed nice and toasty, had a fantastic meal, AND heated water for showers for super sustainable efficiency. As usual, there was more than enough food for everyone, and we are happy to share our abundance with you!

We made a great spread with lots of fantastic dishes!! 



We had fried chicken tenders, herbed quinoa, mashed potatoes, garden salad, broccoli with cheese, and sautéed squash with onions!



It was a beautiful table with lots of high vibe food for everyone.

We had a variety of colors, textures, and flavors in the meal that complemented each other nicely.



As we move into springtime here in Texas, we leave bouquets of flowers on our table to decorate our home and bring a bit of nature inside. 



We love to take the care to set a nice table and make beautiful plates, because it increases our enjoyment of the meal to appeal to all the senses.



We started with a glorious, bright, fresh, raw salad. We piled grated carrots, cauliflower, red onions, bell peppers, and green onions on top of tender green spinach. This has lots of healthful vitamins and minerals and tons of great flavor! Most of us enjoy eating raw foods at all of our meals; some of us make raw foods the very basis of our diets.



We made a bowl of nutritious quinoa and stirred in finely chopped fresh herbs from the garden for extra flavor.



We lightly breaded then pan fried white meat chicken tenders. These are a tasty main course for our meat eaters, and the children enjoy having finger foods that are great for dunking in sauces and condiments.



We made a big pot of one of our favorite dishes - mashed potatoes! If you follow our Sustainable Feast series, you notice how often we prepare this side. In fact, it is one of the few "recipes" that we repeat! We almost always have an abundance of potatoes on hand, and this is an easy and delicious way to prepare them for a crowd. All we do is boil chunks of potatoes until fork tender, then mash them with a little bit of the cooking water and butter, cream or milk, and salt. We make many variations of mashed potatoes, substituting various dairy products like sour cream or cream cheese for the butter and/or cream. Sometimes we use non-dairy milks or creams to make them vegan friendly too! Mashed potatoes are very versatile and always yummy.



We lightly sautéed some green zucchini and yellow squash with red onions for another side dish. It's a simple preparation for more veggies that we often have on hand. 



We steamed a bowl of broccoli and melted cheese over the top to add lots of flavor and enjoyable texture.



It was a beautiful, abundant, nutritious, wholesome spread of marvelous sustainable food!

Why have you been butchering chickens?

We occasionally butcher chickens. Sometimes the roosters wreak havoc on the flock, and they're the first to go.
However, we didn't butcher our own chickens for this meal. This meat was donated from a grocery store that was otherwise going to throw it in the trash and completely forsake the animal while polluting the Earth.

I think the chicken tenders and mashed potatoes would be where I would fill up. The green onions give the potatoes a little extra kick.
