Marinate

MARINATE is not only a way to add flavor and soften fibers to food, but also a technique to achieve better texture and flavor. At the same time, it is a method used to bring out the unique taste of food without burning it in oil or fire.

Marinating meat, fish and paneer in particular can be considered a process of culinary art that requires attention and patience. Choosing the right ingredients, optimal marinating time and the right technique are the main factors to get a tasty and juicy dish.

For example, here I want to tell you how to make Varinate with chicken meat. For this I want to share photos from my previous posts.

  • First, take a glass or metal bowl and take one cup of cornflour in it
  • Add half a cup of maida or chickpea flour to it.
  • Add chili powder, coriander powder, pepper powder, garam masala and mix them well.
  • Then add a cup of curd and mix well with wishk.
  • Take half a lemon, squeeze only the juice and mix them well.
  • Now soak the chicken pieces in this pulpy liquid.
  • Then keep it in the refrigerator for about an hour and after it cools down take it out
  • Take out the soaked chicken pieces and coat them with bread powder or corn flour.

Garnish

Garnishing is often a visual techniqe to make the food atractive, also added its value. One of the edible ingredients like Cheese, red chillies or onions or fresh coriander leaves or saffron or fruits carved into fancy shapes and placed on top of or around the food to add beauty to the appearance of the finished dish. I'd like to take some photos from my post that I already posted for a sample of Garnish and show you here.

Depending on the dish we're creating, there should be garnishing items focused on it. For example, I've added onion and mint to make the biryani appear nice, and I've chopped the onion into circles and sprinkled mint leaves on top. Similarly, I served a poha meal topped with papaya slices and pomegranate seeds.

Braise

When we cook meat, we use this braise method to make the meat tasty and tender. Sauteing the cut pieces of meat in a covered pan for a while will remove the rubbery smell and the meat will be cooked well. Also we cook only the spices without adding water so they are cooked in the fat and gives a good aroma and flavor.

Here im going to explain how to braise chicken meat with the photos i alsreay use in my recipe posts.

  • Clean the chicken and mix them with lemon extract, ginger-garlic paste, oil, salt and turmeric for 1-2 hours.
  • Put the pan on flame, fry the chopped onion with oil until almost golden and add the salt and turmeric to pan.
  • Add chicken curry to the pan and saute for 5-7 minutes.
  • Then close the lid and cook on low flame for 10 minutes until cooked well without water.

Yes I am aware of various spices used in our country. For example, we use anise, cumin, pepper, cinnamon, cloves, cardamom, poppy seeds, turmeric etc. in our daily cooking. Apart from labor mentioned some important spices I would like to mention here are fenugreek, green camphor, caraway. Omam, saffron and castor seeds add flavor and aroma to food. At the same time it has good medicinal properties.

What is the combination of spices you use most in cooking and what preparations do you add it to?

Generally, while cooking food, it is our custom to add spices according to your taste. However, we generally add garam masala spice powder to all dishes. We can prepare and grind it at home. Or "Garam masala powder" is available ready-made in packets in shops, which can also be bought from market, and kept in the kitchen.

Ingradients:
Coriander seeds
Chinnamon
Cumin seeds
Cloves
Cardamom
Nutmeg
Pepper
Biryani leaves
Turmeric powder

  • Put a pan on flame, add coriander to the pan and fry until fragrant.

  • Next, add cumin, cumin, bay leaves, whole pepper, nutmeg, black cardamom, pineapple flower, green cardamom, cloves and bark and fry on medium flame for 5 minutes.

  • Let these also cool. Put all in a mixer, add turmeric powder and grind it into powder.

  • Cool the ground masala powder and put it in a jar.
