Peterson has a handful of extremely rare medical disorders; the idea that because a carnivore diet has had positive results for her (in the short term), that somehow means it's healthy for the average person is absolutely ridiculous.
Are there people who will respond well to this? Most likely. For any food, there are people who need a ton of it, and people who are allergic/intolerant to it. The same is true of any diet, there are going to be people who can thrive on it, those it will bring to the point of near-death, and the vast majority for whom it may or may not work.
However, generally speaking, all evidence points to meat being something that is only tolerable in very small amounts for the average person. Shawn Baker has been readily debunked multiple times, and even his own blood results show how (for most people) extremely unhealthy the diet he promotes is.
