I am pleased to participate in 1st week of SLC Season 23. I love learning from these Challenges. This week we will be learning "Mexican Cuisine". So Let's start,

Have you ever tried any Mexican food? Is there any resembles of their food with your local cuisine?


Yes, I have tried Mexican food. But I have never made Mexican food at home. Mexican and Italian food from one of my favorite restaurants are very popular and I order Mexican food from there. Among the Mexican items, I have eaten nachos several times. I like it very much. I am a citizen of Bangladesh. The local cuisine of Bangladesh has similarities with Mexican food. Even though these two countries are located in different parts of the world, the similarity of their food surprises me. The most common thing that Mexican cuisine has in common with the local cuisine of my country is the use of spices. Bangladeshi people use many spices in every dish that Mexicans use. Although the names of the food of the two countries differ, the difference in taste and spices is very small. For example, Mexican food is tortilla and Bangladeshi bread. Also, my favourite Mexican food, nachos, mentioned at the beginning, has many similarities with Bangladeshi fuchka. For your convenience, I am presenting two pictures below. Both these dishes have a crispy texture. They are spicy, salty and savoury. Different toppings or fillings are used in both these types of dishes.

Which flavour or spice do you like from Mexico cuisine ?


The flavour or spice that I like the most in Mexican cuisine is cumin. Mexicans use cumin in their food and cumin is used in almost every food in Bangladesh. So this spice is the one that I like the most. I mentioned at the beginning that Mexican food is my favourite; nachos are made with oregano, which is my favourite. Oregano adds a flavour almost like our coriander powder or dried fenugreek powder. So I like this flavor very much because it gives our native flavor. Also, I like the various spices used in Mexican cuisine, such as black pepper powder, paprika, garlic, onion, etc.

Enchiladas are a Mexican dish of tortillas ( of corn or flour) wrapped around a filling and covered in sauce. They can include a variety of fillings and sauces - Course Teacher

So, for a perfect Enchiladas recipe, we have to follow 4 basic steps. Which are

  • Making Tortillas
  • Making Enchiladas Sauce
  • Chicken filling
  • Assembleing All these

Ingredients list for Tortillas

Wheat flour2 cup
Melted butter2 tbs
Salt1 tbs
Baking powder1tbs
Warm water1 cup

Making Process

  • First, I measure 2 cups of wheat flour and add salt, baking powder, and melted butter. Mixed all these ingredients with warm water. I took all the ingredients of the above-mentioned quantity. I make a dough with all.
  • Then knead it properly until the dough becomes soft and smooth, as I show in my pictures. Rest it for 10 minutes with a cloth cover.

  • After 10 minutes I make small size balls from dough. It was very soft. Shaped it in a round with a rolling pin. Fry it on a flat pan from both sides.

[N.B] I try to make the tortilla round and equal in size.


Ingredients list for Enchiladas Sauce

Garlic chopped1 tbs
Salt1 tsp
Tomato paste2 tbs
Cooking oil2-3 tbs
Black pepper1 tsp
Paprika powder1 tsp
Cumin powder1 tsp
Sugar1/2 tbs
Water1Cup

  • Roast the tomatoes at low flame for 8-10 minutes. Then, peel off the skin of the tomatoes. After that, cut skinless tomatoes into small sizes.
  • Heat a pan and pour sliced tomatoes. Then add chopped onion and garlic. Then, add all the above-mentioned ingredients as per the mentioned quantity.
  • Add 1 cup of water and cover it for about 5-6 minutes. Just before turning off the stove, add the tomato paste and cook for another 2-3 minutes.
  • Finally, use a blender for fine sauce.

Garlic chopped1 tsp
Oil2 tbs
Water1/2 cup

Making Process


  • Cut boneless chicken into pieces.
  • Heat a pan and pour chicken. Then add chopped onion and garlic. Then, add all the above-mentioned ingredients as per the mentioned quantity.
  • Pour 1/2 cup of water and cover with a lid.
  • Add oil just to fry the chicken properly for 2-3 minutes and done.

  • Preheat the oven to 200°F for 10 minutes.
  • Add chicken filling and chopped onion to the tortilla and roll it.
  • On a baking dish (here I used a heart-shaped baking dish), spread Enchilada sauce thoroughly and place prepared rolls one by one.
  • Then spread Enchilada sauce on the surface of rolling tortillas.
  • Finally spread mozzarella cheese.
  • Bake in preheated oven at 200°F for 10 minutes.
  • Garnish it with fresh coriander & serve it to all.

Do you face any difficulty during making the recipe?(2points )

No, I didn’t face any difficulty during making the recipe because of your detailed explanation of every step. But yes, I was a bit upset after making the tortilla because here I used wheat flour, so the colour of my tortilla became brown. If I had used white flour, then it would have looked better, but then when I tasted it, it was simply awesome. We all enjoyed this Mexican food very much. Thank you @suboohi dear for this detailed and clear instructions. Because of you I try something different at home.
