Today I am going to participate in the SLC contest organised by Dear. @suboohi about the Global Cuisine of Pakistan. So today I am going to cook Chicken Rice for the first time. So without wasting any time let's get into it.

Yes, I have tried almost all the Pakistan food as I am living in Pakistan.I have tried different dishes of Pakitan like Chicken Karahi, White Handi, Beef Pulau, Chicken Pulau, Tikka, Seekh Kabab, Dam Pokh, Fried Fish, Biryani, Kabab and many other food.But among them I like Chicken like those food related to Chicken and among them I like Chicken Karahi the most.Chicken is my favourite among all the dishes.
Becasue when I was small like few years back, when my father was alive then when he came to house late at night and then woke me up.I told him that why are you waking me.Then he told me silently that come outside of the room or your other siblings will awoke.So then I come back from the room and then my father gave me surprise by bringing Chicken for me.Then at that time, late at time I ate Chicken.Eventhough a lot of years spent but I cant forget that memory.
As you know that I am from Pakistan and here every type of Pakistani food is present.Moreover I am living in Prime location of Peshawar, Pakistan which is Hayatabad.So that mean that in this place every food is available from Chicken Karahi to Biryani and other foods too.Even though now a days if you just call to the nearer restaurants then within 20 to 30 minutes thee food would be delivered to your house and the delivery is also free.So this is a great offer and I usually orders some Pakistni food late at night especially in the Holy month of Ramadan.(February)

So in this task I have to cook any Pakistani Cuisine so I would cook one of the most famous cuisine of Pakistan which is Chicken Pulau.So for cooking this their are some ingredients and all of those ingredients are mentioned below:

- I wanted to add Chickpeas to the Rice, so I kept it outside so that it would unfreeze, and then I took out the rice.I have been cooking 8 cups of rice.So, first, I took 8 cups of rice, and then I added water to it so that the rice would soak.Also I am cooking rice for the first time in this Holy month of Ramadan.As in Ramadan we Muslims do fasting.

- Now I take out the other container and keep it on the Stove. To that stove, I add 4 cups of oil. My mother told me that half the oil would be used according to the quantity of rice, so if we had 8 cups of rice, we would use 4 spoons of oil.You can cook it at any container as their is no any specific container but try to use Steal container.


- Now I chopped 2 Onions as it was a very hard task,Becasue when we cut onion then our eyes start crying.However after chopping the onions we had to simply add the onions in that container having oil till the onions colour changes into brown.When I was cutting the onions at first, my mother just came and told me that what are you doing ? You are cutting onion wrong so then he told me an easy and fast way to cut these onions.


- After doing this, I start grind the lessons becasse lessons had a great role in the taste of the rice.So after grinding my onions was also ready as you all can see that the onions are changed into brownish and blackish colour.Basically we fry onions because of the brown color of rice as due to this the rice becomes brown.As you know that I am cooking the rice for the first time so that I am taking every single step and instruction from my mother.So when I kept thee onions for frying then suddenly call came to my mother cell phone, and that call was of my Moms college friend.When my mom pick up that call she talks with her for about 1 hour.I was very tired just because of this,I cant proceed further in cooking.


- Now after that I have add my Chicken in it for frying.First I clean the Chicken after that I add it in the container.After adding the Chicken in the container I mix it well.Basically this was the step which I love the most.Becasue Chicken is my favourite in food and then frying Chicken in oil is so fascinating.When the Chicken changes its colour to brown is so satisfying.


- Now I add 1 chopped tomato in that paste of Chicken and then for mixing this paste for 5 minutes.Then I add some spices in it for the taste like Red species.Basically tomatoes were already chopped and was kept in the freezer because my mother bought a lot of tomatoes at one time and then chopped, and after that we make small packets of these chopped tomatoes.So that when we need chopped tomatoes we can easily use it.(Pro Tip)


- Now after adding the species I then put the cover of that container so that the Chicken would be fryed and cook greatly.I have put the cover for 10 to 15 minutes.Even though the Chicken can be cooked also If we don't put the cover but when I asked my mom about that then she replied that we kept it just because it helps in the softening of the meat.


- After 15 minutes I removed the cover from the container and then a lot of steam was coming which was giving a professional and cool look to this.Then when I see the Chicken so it was cooked very greatly and thus my mouth start watering but I could not taste because I was fasting.


- Now my chicken was cooked fully so t was time to separate this Chicken from that one container to another container.I have just checked the softness of Chicken, and its softness was next level.


- Now it was time to add water so in that I have added 4 cups of water.Becasue the rule applies here too like if you are cooking 8 cups of rice then you would have to add 4 cups of water so simply I have added the water here as you all can see in the below image.


- Now it was time to add some more spices like Chaat Masala, Garam Masala and many other.Along with that I have added vinegar to it with this I have added some green chilli.And after that I have mixed this very well.


- Now in this step I have added the soaked rice, after adding the rice I have been mixed it well.After that I have covered the container again for the good cooking of rice.



- Now after 15 minutes I have opened the cap of the container and then I told my little sister to taste it, because if their is any shortage of any species or any other thing so that we can add it now because I cant tasted it by ow as I was fasting in this Holy Month of Ramadan.However when she tasted she told that salt is very less so then I have added 3 spoons of salt in it which was giving it a thrilling effect.After this I think to give one plate rice in Mosque so the Islamic Scholars can eat it too.So before wasting any time I do the same and gave one plate of Rice to the mosque with Raita.After giving him I also fill a place full of rice for my family so that we can also enjoy the Rice too.

I am from Pakistan and the shared recipe Chicken Karahi is almost available in every place of Pakistan. Even though I like it the most.The way you cooked the Chicken Karahi is just followed by us, but here most probably if yogurt is add in the Chicken Karahi as you have been added then we call it White Handi instead of Chicken Karahi.But their are not much differences among that.Also luckily today is Ramadan and the first Ashra is going to over and today we have been cooked White Handi which was very delicious.Especially when the White Handi is cooked by my sister.It taste different.As she was the first who learn to cook White Handi for the first time.So it has been proved that our local cusine reassemble with your shared recipe.

I like a lot of species of Pakistan Cuisine because of the taste and smell they have but among them one and only Chaat Masala is my favourite because when we add Chaat Masala on any dish or food then it makes it a unique, yummy and tasty.Also when my mother cooks Paratha from Naan for us then we ate that Paratha by dipping a piece of Paratha in the Chaat Masala, from this you can just imagine how I like and love Chaat Masala moreover this spice is added to almost all of the dishes.Also Chaat Masala is added on many Street foodssssssincluding Gol Gappay, Samosa, Pakoray, Chutneys.Also we add Chaat Masala on rice for the spicy taste and this taste just amaze us.
