Baking is one of my favorite past times. I have a lot of sensitivities so I enjoy baking to satisfy my sweet tooth and those of my close friends and family. Everything I bake is low sugar or no sugar, gluten free, and dairy free. You may be wondering if anything without those three things could possibly taste good? Omggggg my treats will have you constantly craving them! There are a lot of healthy ingredients in these cookies so I though I would highlight a couple below. Highlighted Ingredients | Oats & Cinnamon
Oats are fuel for the good bacteria in your gut and can relieve discomfort. Oats are packed full of vital minerals, vitamins, and antioxidants. In a half cup of oats you can find:
Manganese: 191% RDI
Phosphorus: 41% RDI
Magnesium: 34% RDI
Copper: 24% RDI
Iron: 20% RDI
Zinc: 20% RDI
Folate: 11% RDI
Vitamin B1 (thiamin): 39% RDI
Vitamin B5 (pantothenic acid): 10% RDI
Small amounts of calcium, potassium, vitamin B6 (pyridoxine) and vitamin B3 (niacin)
Cinnamon has an array of health benefits and has been used as medicine around the world for centuries. It has antioxidant, anti-inflammatory, anti-diabetic, anti-fungal, anti-viral, anti-biotic, anti-microbial, immunity-boosting properties as well as cancer and heart disease protecting abilities. Cinnamon ranked 7th of all foods with the highest concentration of antioxidants, giving it a powerful punch when fighting free radicals. This potent spice can reduce inflammation, fight diabetes, and protect the heart. Cinnamon can activate neuro-protective proteins which shield brain cells from mutation and damage. Cinnamaldehyde, a compound found in cinnamon, has the ability to protect DNA from damage, inhibit cancer tumor growth, and encourage cancer cells to go into apoptosis (self destruction).
Chewy Peanut Butter Oatmeal Cookies GF | DF | V
Ingredients
Wet Ingredients
1 cup organic unsalted creamy peanut butter
1/8 cup of coconut oil
1/2 cup coconut sugar
2 flax eggs (2 tablespoons of ground flax mixed with 6 tablespoons of water, whisk together and let set for 15 minutes)
1 1/2 teaspoon pure vanilla extract
Dry Ingredients
1 1/2 cups gluten free rolled oats
1/2 cup almond flour
1/2 cup unsweetened coconut flakes
1/4 teaspoon baking soda
1/4 teaspoon of salt
1 teaspoon ground cinnamon
Directions
Preheat oven to 350°F.
Line baking sheet with parchment paper or a baking mat.
In a medium bowl mix the dry ingredients & in a large bowl mix the wet ingredients.
Add the dry to the wet slowly using a rubber spatula to fold until combined well.
Using a tablespoon, scoop up some dough and form a ball.
Place on baking sheet and use a fork to flatten to desired thickness.
Bake for 10-15 minutes. Remove gently with a spatula and place on a cooling rack.

Notes:
You can store your tasty treats in an air sealed container for 1-2 weeks. I recommend that you use all organic ingredients for the best taste and health benefits. If you’re a chocolate lover add a 1/2 cup of your favorite kind of chocolate chips to the mix.
