Aloha Friday: Recipe for Always-a-Winner Easy-to-Make Corn Chowder

Simple, quick, easy-to-make corn chowder is yummy on one of our 69 degree Fahrenheit nights. On the rare days when the temperature drops to 70 or even 69 degrees, we feel cold, and the next day at work everyone comments on how freezing it was the night before.

Person 1: "Wow, wuz so cold last night, yeah?"

Person 2: "Yeah, no! Wuz freezing."

Person 3: "Ho man, yeah wuz cold."

And on and on, until everyone in the office mentions, with verbal exclamation points, how cold they felt.

[I know, everyone on the continental United States and Alaska thinks we're crazy, or joking, or mocking them; but it's true, we do feel really really really cold. Honest.]

On those frosty, wintery days, islanders welcome home-made beef stew and rice,

Less common and equally delicious is the corn chowder we made. Come to think of it, for the life of me I can't think of any other family, relatives included, that made corn chowder ... hmmm .... So maybe corn chowder isn't a typical dish prepared in island homes, although widely available at local restaurants like Zippy's, a popular local, uniquely Hawaiian chain of sit-down and take-out restaurants (http://zippys.com/) where you can order it in house

Here's our recipe for corn chowder.

Corn Chowder

1 lb bacon, cut into slivers
1 round onion, diced
1 potato, peeled and diced (you can add or substitute chayote)
2 cans whole kernel sweet corn (about 15 oz/can)
2 cans cream style sweet corn (about 15 oz/can)
2 cans evaporated milk
salt and pepper to taste

On medium heat, saute bacon in a pot until it is cooked, but before it crisps. Add diced onions and stir until translucent. Add diced potato and stir until firm cooked. Add whole kernel corn, cream style sweet corn, milk, and salt and pepper to taste. Bring to a simmer for 10 minutes or so.
