Lactic Acid Bacteria

Last night I used the Rice Wash from making another natural farming microbe collection technique called Indigenous Micro Organisms. In case you missed it here is the link:

The Rice Wash will act as a substrate to collect all good and bad bacteria through the starch in it. I covered with a paper towel but never a coffee filter. Too small of holes for collecting bacteria.

I placed the Rice Wash outside by our umbrella palms which are a relative of bamboo. Rumor has it bamboo can attract 100+ different kinds of Lacto strains of bacteria.

Once the rice wash seperates and smells sweet then it is ready.

The Rice Wash separated nicely but for the first time in 3 years it didn't smell sweet? Uh oh. Will it still work in not sure. We will see. I will note the smell was neutral and not bad but not sweet😅

I then added the Rice Wash in a ratio of 1-2 parts rice wash to 10 parts organic whole milk.

I was taught to use a paper towel and to fill the container 2/3 full. Wild Fermentation in Las Vegas concerns me with valley fever and other random fungal and worm stuff going around. I instead opted for lacto-fermentation where the ferment lacks air and the ferment becomes more lactic acid heavy leaving the yeast at a smaller less pathogenic level, In theory. I did this by using lids and airlock.

Then I just placed in a warm room. This hopefully will be done in 24-48 hours because it is 75-80° in the room they are in. When it's colder it takes longer.

I learned this from taking a Korean Natural Farming class with Chris Trump in Idaho. Cool dude and an amazing teacher!
