Vegetable Miso Soup

Inspired by the miso-based vegan ramen recipe that I came across, I came up with a vegetable miso broth with rice vinegar, and used bean string noodles. Topped it off with an array of mushrooms, carrot, and scallions.

This is very easy to make! You don't even have to make your own vegetable stock. You can use store-bought stock, bring it up to a boil, add a spoonful of yellow miso paste, and dried mushrooms, then simmer for 30 minutes. Strain out the mushrooms and set aside to use as toppings. The carrots and scallion bulbs were boiled together with the bean string noodles to save some time.
