Summer healthy and light dessert - Russian cheesecake

Usually, when you hear the word "cheesecake" you can imagine the guilty pleasure - rich and high in the fat cake, which is super delicious but not healthy at all and doesn't work for the everyday diet. Today I wanna share with you recipe of Russian style cheesecake - you would be surprised how tasty is it and super healthy at the same time. You can eat as much as you can and don't feel guilty!

Ingredients:

Cottage cheese (can be replaced with ricotta cheese) - 1 lb
2 whole eggs
4 tablespoons sugar
pinch of salt
1/2 teaspoon vanilla extract
2 tablespoons of semolina

Instructions

  1. Mix all ingredients together (you can use the food processor).
  2. Place the filling a parchment-lined or greased pan.
  3. Heat oven to 350 F. Bake 60 to 75 minutes or until the surface of the cheesecake would be golden brown.
  4. Remove from oven and cool.
  5. Serve with jam or sweetened condensed milk (classic!)

Super easy, right?

are you trying to transfer it to the veg recipe? so you can just put 1 tablespoon of the coconut oil instead of eggs. It would allow to save the structure of the daugh.
