Day 2 of My 7 Day Smoothie Challenge

Today is Day 2 of my 7 day smoothie challenge, and so far, so good!

I am really enjoying simplifying my diet and eating fresh, whole foods and no animal products whatsoever. As I mentioned in yesterday's post, Day 1 of My 7 Day Smoothie Challenge! and my post introducing this challenge, 7 Day Smoothie Challenge, Here I Come! I am slowly moving towards a 100% vegan diet. I am super EXCITED about it too!!

Since my diet has been "off the rails", I figure a week of smoothies and salads is just what I need to get back on track. So, what did I eat today? A few fruit smoothies and a very large salad. This really has not been hard for me simply because I love smoothies and salads as much as I love cake and ice cream =)

Breakfast and Lunch

At breakfast and lunch, I made this delicious fruit smoothie using honeydew and banana.

~ Honeydew Smoothie Recipe ~

1 frozen, ripe, banana

about 1/2 honeydew melon

In my personal blender, I added almost a half of a honeydew melon. I cut the honeydew in half and used all but 1/4 of the halved melon. You can also use frozen honeydew if want it super cold. Since I used chilled honeydew, not frozen, the smoothie was the consistency of a slushy - very refreshing, and sweet!

Dinner

To throw together this salad, I tossed together kale, massaged it with some ripe avocado, then topped with freshly squeezed lime juice, fresh salsa, lots of green onions, and salt and pepper. I know it may sound like a strange salad combination but it was simple, fast, and very uncomplicated... just what I wanted. This is something I do a lot, actually. I forego the salad dressing and just massage my greens with avocado. As long as you add some salt, it tastes great!

Go for it! It's been pretty easy so far. The only thing I've struggled with is the temptation to eat sweets. But the smoothies are sweet, so that helps ;)

Your body will love all the greens. This looks great and salads are something I never get tired of.

I love that idea of massaging your salad with the ripe avocado. I probably eat at least one a day. It is my go to for my salads, I have not gone Vegan yet but grow all my own veggies organically and smoothies are going to be one of my all time go to meals for daytime. Great post, nice to meet you here.

Thank u @sunscape, yes, I only recently started doing this with my salads. I have not been a fan of prepared dressings from the grocery store for a long time and so one day, I though, why not mash up avocado in a salad? It still has the mouth feel of a dressing, and for me just a sprinkle of salt tastes good and nothing else. I just really like knowing there are no preservatives, bad fats or other things like high fructose corn syrup in my salad. It defeats the purpose of eating a salad ;)

I so agree, I have had a hard time with them myself. I do my best to feel what's right to eat, dressings and other high fructose, sugar and fats, just are not cutting it anymore. I love live greens and veggies that I grow organically and all of a sudden my body craves berries. I have never been able to eat fruit my entire life until now. So, I totally get it and am learning to adjust my way of eating too. thanks for the great post.
