You can throw out the bones or turn them into bonemeal for plants or your own consumption. That's it, store it or use it right away.

I just bought my first batch today. Is there a brand that you recommend to get the most nutrients from? I am on a ketogenic diet myself and I've been looking for something to avoid the carb flu if or when I leave ketosis.

Yeah for sure, As I said above, Grass-Fed and Pastured Bones. Animal of your choice. If it's fowl then make sure it's pastured. Head to a local farm or butcher.
