Looking for feedback on personal salad recipe

I created this recipe based on my own research (I'm a scientist, not a chef). However, I welcome any feedback from people with more developed culinary instincts. I would like to add that the intent here is to avoid the sauces and powders that make all of our food so unhealthy. So please, no suggestions on various dressings or additives which are only food industry stealth methods of getting msg into our diets.

Ingredients:

1/4 purple cabbage ( not 1/4 cup, 1/4 of the standard size cabbage head)
1/2 bunch of spinach
1 slice purple onion (1/4 inch thick, through thickest part of the onion, or equivalent volume)
2 beets
3 leaves beet greens
1/2 bunch parsley (discard stems if desired)

Topping:
1 teaspoon feta cheese
2 tablespoon olive oil
1 teaspoon balsamic vinegar (to taste)

Directions:

  1. Cut cabbage, spinach, onion, beet greens, parsley into small pieces
  2. Grate beets
  3. Combine all ingredients together in bowl. Toss salad.
  4. Add portion to small bowl. Add olive oil, balsamic vinegar and feta cheese.

If you eat this ~3 times/week for a month it changes the gut flora significantly enough to reduce cravings for junk food.

I cannot emphasize this enough. Fresh is critically important. Nothing in a bag. Everything fresh. It's best if you have to wash the soil off first. Nothing pre-chopped. Eat as much as you like. This a diet of abundance. You cannot over-eat with this. (Feta cheese maximum - 1 teaspoon)
