Greetings and welcome to my blog. Am glad to be a part of this class on healthy cooking. Healthy cooking makes for healthy eating. It’s such a beautiful class and so much to learn already in the first week.
Based on what you have learned in this class, do you consider that you have been eating a healthy diet? Explain your answer.
Base on what I’ve learnt from this class, I will say that I’ve been eating both healthy and unhealthy as the same time. This is because sometimes I’ve seen myself eat the recommended carbohydrates, protein and recommend fats and at the same time, I mixed them with the unrecommended proteins, fats and carbohydrates.
Sometimes I even go along to just eat the unrecommmended ones because am in a hurry for fast food or too tired to cook. Well we learn everyday and from today, I’d do my best to eat better and healthier by eating more of the recommended carbohydrates, proteins and fats as taught in the class.

Cooking method and how I consume it.
This is beans and it’s a recommended protein. I usually cook it through boiling method and I love to eat more of jollof beans. I use red oil to cook it and I also love to add plantain or potatoes when cooking it. Sometimes I add vegetables to the jollof beans and fish. Beans is a good source of healthy protein and good for the body.

Cooking method and how I consume it.
Mostly I use sausage for garnishing my foods such as noodles, jollof rice and fried rice. I also used it in making plantain fritata and I eat it with chips and chicken with ketchup.
I boil it in some cooking methods while sometimes I fry it in vegetable oil when I want to eat it with fries and ketchup. It delicious but not a recommended protein.

How I consume it
I use the olive oil as a recommended fat in cooking all forms of food. I use it to cook stew most times. I also use it to cook jollof rice and in frying meats, fish and chicken. I also use it to fry potatoes, yam, plantain and most fried foods I prepare.

I don’t use margarine often. I use it once in a while for baking most times.

I use vegetable oil to prepare my toast bread but bread is a processed food. Hence I could resort to recommend carbohydrates such as yam, rice and etc instead of the processed food. The sardines are ok. I can go for yam in sardine sauce as a good alternative for healthy breakfast.

Moi moi is gotten from legumes; beans and it’s ok in cooking with vegetable oil which I used. The custard can be augumented with dairy products such as yogurt and milk and even fruits for healthier eating. I add milk in the custard sometimes.

This particular food combination is very healthy and all the ingredients used in cooking it are recommended macro nutrients. I cook the beans with vegetable oil using boiling method. I can add vegetables to it when eating it for fuller effects.
Healthy eating is very necessary for healthy living hence with the knowledge gotten, I would strive to gravitate towards using recommended macronutrients in my cooking onwards.
