Personally, I use Ubuntu Mate as my daily driver. I like it because it can easily be customized to benefit her workflow. Additionally, Ubuntu Mate has an excellent software boutique that allows users to easily install or remove applications, and a welcome screen that will help her learn some of the basics of running a Linux distro.
