Kopi Luwak is coffee that is created by natural selection process through animal of Luwak (Paradoxorus hermaproditus).
The 18th century is the beginning of the history of Luwak coffee in Indonesia. At that time the Dutch government opened commercial plantations in the Dutch East Indies, especially on the island of Java and Sumatra.
The Dutch Government In the era of Cultivation or Cultuurstelsel (1830-1870) strongly forbids indigenous plantation workers picking coffee fruit for private consumption. Until one day the plantation workers found animal waste contained grains of coffee beans in the plantation area and it turns out that they find is a ferocious animal dung that likes to consume coffee beans.
Because there is a ban on picking coffee beans, the farmers collect coffee beans in civet droppings and process them by washing them first, then roasted and crushed, then brewed with hot water like making a cup of coffee in general.
Apparently farmers feel a different sensation of coffee they find. The taste and aroma of coffee is very different from coffee in general, Luwak coffee feels much more delicious than regular coffee. So since it created Luwak coffee.
The news about the deliciousness of Luwak coffee from the discovery of farmers was finally smelled by the Dutch owners of plantations. And since then also civet coffee became a favorite drink among the Dutch elite.
But because of its scarcity and the process of making it including unusual, civet coffee became the most expensive coffee since the colonial era.
