Here's a basic recipe for making pav bhaji:

Ingredients:
3 large potatoes, boiled and mashed
1 cup cauliflower florets, boiled and mashed
1 cup green peas, boiled
2 medium-sized onions, finely chopped
2 medium-sized tomatoes, finely chopped
1 bell pepper (capsicum), finely chopped
3-4 cloves of garlic, minced
1-inch piece of ginger, minced
2-3 green chilies, finely chopped
2 tablespoons pav bhaji masala
1 teaspoon red chili powder
1/2 teaspoon turmeric powder
Salt to taste
2 tablespoons butter
1 lemon, cut into wedges
Fresh coriander leaves for garnish
Pav (soft bread rolls)
Instructions:
Heat butter in a large pan or skillet. Add minced garlic and ginger, sauté until fragrant.
Add chopped onions and green chilies, cook until onions turn translucent.
Add chopped tomatoes and cook until they turn soft and mushy.
Add chopped bell pepper and cook for a few minutes until it softens.
Add pav bhaji masala, red chili powder, turmeric powder, and salt. Mix well and cook for 2-3 minutes.
Add mashed potatoes, cauliflower, and boiled peas to the pan. Mix everything together until well combined.
Mash the mixture using a potato masher or the back of a spoon. Keep mashing until you achieve the desired consistency. You can add some water if the mixture is too dry.
Cook the bhaji mixture for 5-10 minutes, stirring occasionally, until it is heated through and well blended.
Garnish with freshly chopped coriander leaves and a squeeze of lemon juice.
Toast the pav on a skillet with some butter until lightly browned.
Serve the hot pav bhaji with buttered pav and lemon wedges on the side.
Enjoy your homemade pav bhaji!
