Hi there))) Besides showing you what I’ve been eating, I’ll also share the recipes because they’re quick and simple - no need to spend hours in the kitchen!
Goat Cheese with Honey and Walnuts
Before baking cheese with honey and walnuts, pick a cheese that holds its shape. A good-quality cheese will stay firm in the oven rather than melting into a mess. In a pan, preferably non - stick, add some oil. Once the oil is heated, slice the cheese and place it in the hot pan. Let it cook for about 3-4 minutes on one side. Then, add a tablespoon of honey. Flip the cheese slices to cook on the other side as well. Finally, add the walnuts to the pan. After cooking for another 2-3 minutes, take the cheese off the heat, drizzle the remaining honey over it, and serve with walnuts and the flavorful sauce. Simple and very quick for those who love dairy products, are not vegan, and have no lactose intolerance.
Three Dips with Poppy Seed Bread
Roasted Eggplant Dip.
Roast the eggplant and cut it into medium pieces. Add salt, sesame tahini, olive oil, cumin, lemon juice, and parsley. Mix everything well, and it's ready to eat! This dip is also suitable for vegans.
Olive Tapenade.
Blend together olives, sun-dried tomatoes, capers, garlic cloves, and olive oil. Once smooth, it's ready to serve. Quick and delicious!
Tarama Spread.
This spread includes fish roe, onion, garlic, a toasted slice of bread, oil, and lemon juice. Blend everything until smooth, and it's ready to enjoy.
Rice with Vegetables and Eggs
Making rice with veggies and eggs is easy! Boil rice for 10-15 minutes, rinse, and drain. Fry eggs, slice them, and stir-fry veggies until crisp. Toss everything together with a little salt, give it a quick stir for 2-3 more minutes, and you’re done!
Enjoy
