Knock Knock, anyone home?
I know I'm seriously late but for sure am not missing the FAVM Christmas Eve party, so have brought along some Choc Oat Macadamia Crunchies as my contribution!

We have never ever experienced as many power outages as we have these past two weeks!

First we had Loadshedding Blues which are planned electricity outages, then this past weekend we had a 33 hours unplanned outage - apparently a blow-out at a substation and staff shortages did not help!

Running a guesthouse becomes highly stressful during times like these, but our weekend guests were fabulously understanding; braaied (BBQ'ed), cooked on gas and swam in the moonlight with emergency lamps lighting the way!
They said they still had fun as the weather was good so they spent the days at the beaches and were pretty tired at night, but hubby and I were stressing.
Frozen food and cold stuff was taken to friends nearby who still had electricity and my Christmas baking came to a dead halt!

I was busy making a new batch of fruit mince filling for Christmas Mince pies and those got dosed with Brandy, and more brandy as the lights stayed off. I ended up finishing it on the gas stove and only did my baking today, but I have yet to find a good vegan pastry, so that is not my contribution for FAVM. I can show you the making of the Fruit Mince filling though as everything in there is plant based - deliciously spicy and aromatic with cinnamon, ginger, allspice, orange & lemon zest and brandy.

We however don't have much time to bake for the FAVM Christmas Eve party, so those mince pies will have to wait as we're making a quick batch of Choc Oat Macadamia Crunchies with Rolled Oats, Coconut, Raw Cacao, Maple Syrup, Macadamia and Peanut Butter; Stone Ground Cake Flour and Brown Sugar was added, so it's not really a healthy treat, but hey, it's Christmas so we can cheat a little not so!

RECIPE TIME

  • 125ml Macadamia Nut Butter
  • 125ml Peanut Butter
  • 2 Tbs Maple Syrup
  • 4 Tbsp filtered Water
  • 250ml Brown Sugar
  • 10ml Bicarbonate of Soda
  • 500ml Rolled Oats
  • 500ml Coconut
  • 500ml Stone ground Cake Flour
  • 3 Tbsp Raw Cacao

Melt first 5 ingredients in a pot
Add Bicarbonate of Soda
Mix all dry ingredients, make a well in centre and add melted mix
Knead till mixture comes together - you may have to add a little extra water if too crumbly
Press into pan and bake at 180C for approx 20-30 min
Cut into squares while hot
Drizzle melted vegan chocolate on top

I am so sorry about your electricity troubles Lizelle. That is really the last thing you need during the Holidays! Nevertheless you still managed to make these fabulous Crunchies that calling my name, lol. I can totally taste them! Great job my Dear, you are a magician!🎄😍🎄

Thank goodness the lights stayed on and we were able to have a good Christmas, it was so stressful especially with having paying guests! Thank you for your kind comments Lena, hope you had a wonderful Christmas:)

You are most welcome Lizelle and thank you too. Christmas is stressful enough under normal circumstances, so I am glad everything turned out well for you after all. I had wonderful time with my family, especially my twin grandsons 🎄😍🎄

Those crunchies look and sound divine, never tried any with nuts, my dad was the one who baked crunchies and shortbread, always a favourite treat.

Glad to hear you are out of the dark, hopefully able to enjoy Christmas with the lights on, wishing you and your family a safe season.

Thank you Joan, they were good, it aas an experiment as I've always used butter but the rules here are everything must be plant based! We had 2 power dips on Christmas eve but the lights fortunately stayed on, we had a lovely Christmas day, drove up to Ballito and spent the day with my nephew.
