Paneer Paratha Recipe is one of those dishes i usually reserve for weekends. If made in the traditional fashion its heavy on calories and not something one can afford to consume everyday. There are more healthier versions more veggies are incorporated and the flatbread is baked without any fat. However here we will look at the traditional recipe which is rich and tasty. You can always tone down the taste quotient and spike the health quotient as per your preference :)
TIPS
If you are vegan you can replace the Cottage Cheese with Tofu and Ghee with Cooking oil.
If you don't know how to flatten dough with stuffing, you roll two separate flat breads and sandwich with fillings in between. HERE is a Video of how to Roll Flat Bread.
If you can't even roll a single one, then get two ready made tortillas, sandwich with fillings and seal the edges with some flour dough.
Be careful when you knead the dough. Add water carefully. Too much water will ruin the dough. Just add some extra dry dough to balance if that happens.
Ingredients
The flatbread
2 cups whole wheat grain flour| multi-grain wheat flour.
1/2 tsp salt
1 tbsp ghee/Oil
1/2 tsp sookha pudina | dry mint leaves ( Optional)
The Filling
1 cup grated cheese | tofu
1 medium onion finely chopped
1/4 tsp or as per taste - red chilli powder | pepper ( Optional)
1/2 tsp coriander powder ( optional)
1/2 tsp salt
2 tbsp Ghee per Paratha / Cooking oil if you are vegan.
The Recipe
Add the flour,salt,ghee/oil and dry mint into a pan and make the dough. Set aside.
Mix the Paneer / Tofu, Onion, salt, red chilli | pepper, salt, coriander powder. Set aside.
Take a small amount of dough and flatten it. HERE is a video on how to flatten.
Take a small amount of the mixture and place in the center. Wrap the surrounding dough around the mixture.
Flatten the dough again this time with the mixture inside.
Heat a flat pan add a spoon of ghee/oil. Wait for pan to heat up.
Put the flat bread on the pan. Cook for 30-40 secs.
Flip carefully and let it cook.
Take some ghee/oil and apply on top of the bread with a brush/spoon/
Flip and repeat the ghee/oil process again on this side.
Cook till both sides are cooked and have brown spots and becomes a bit hard and crunchy.
Serve with curd, butter, dip or achar of choice.

Now that's a tasty yum Paneer Paratha. This is usually served with a huge lump of " Desi Ghee" | Home made clarified butter. While that option remains open you can also try a lump of Butter. If you are vegan you can try Margarine. This goes especially well with Spicy Indian aachar | pickles eg: mango/garlic/green chilli/lemon achar.
