Scrambled Eggs with Tomatoes
INGREDIENTS.
2 large tomatoes, 3 eggs, vegetable oil, a pinch of spring onion, a pinch of salt.
Steps to prepare.
Clean the tomatoes and prepare the eggs.
Cut the tomatoes into large pieces.
Add the eggs to a bowl and beat with a small tablespoon of about 10g of cold water so that the scrambled eggs are fluffy and tender.
Heat the oil in a hot pan, add the egg mixture to the pan, leave for a while and when the egg mixture has set on the bottom, break the spatula into pieces, cut and remove from the pan
Pour in the tomatoes, toss gently and sprinkle with a pinch of salt. When some of the tomatoes are soft, return the eggs to the pan and mix well to remove from the pan, the residual heat will continue to heat the tomatoes, both for style and texture.
