Sweet and Sour Eggplant
Ingredients】:1 aubergine, chili pepper, green onion and garlic, 2 tablespoons dark soy sauce, 1 tablespoon dark soy sauce, 2 tablespoons tomato sauce, ½ teaspoon salt, ½ teaspoon sugar, corn starch
【Method】.
1: Peel the aubergines, cut into thumb-thick strips, sprinkle with a spoonful of salt and marinate for 10 minutes.
2: Add the corn starch and weigh the pot, so that each eggplant strip is covered with a thin layer of starch.
3: Heat the oil in a pan until it reaches 60% heat, then fry the aubergines in the pan over medium heat until the surface is golden brown and there is a relatively crisp crust, then remove from the pan and drain.
4: In a bowl, add the soy sauce, soy sauce, salt, sugar, tomato paste and 1 teaspoon cornstarch, then add half a bowl of water and mix well to make a sweet and sour sauce.
5: Heat a little oil in a pan, add the spring onions, garlic and chillies, then pour in the sweet and sour sauce and cook over a medium heat until thickened.
6: Add the aubergine and stir-fry evenly, then serve.
