White Radish and Lamb Soup
Ingredients: 900g of lamb / 500g of radish / 5g of peppercorns / 20g of spring onions / a few chopped spring onions / a little pepper / salt / 10g of ginger / 10g of wolfberries / 20g of coriander
Step 1: Wash and peel the white radish, add cold water to the pot and blanch the lamb with the radish peel and 5 slices of ginger and peppercorns.
Step 2: Skim the froth from the lamb during the blanching process, cook on high heat for 10 minutes and remove the lamb from the pot and rinse with water.
Step 3: Add water to the pressure cooker, also covering the lamb, and press in the onion and ginger for 30 minutes.
Step 4: Cut the white radish into thin slices, open the lamb and discard the ginger and spring onion slices, leaving only the lamb and stock.
Step 5: Fish out the lamb and cut it into thin slices before putting it into the soup. Add the sliced radish to the lamb soup and cook the sliced radish.
Step 6: Add the wolfberries and cook, season with salt, sprinkle with chopped spring onion, coriander and pepper and mix well and enjoy!
