Hi! Yesterday me and a friend of mine made Vegetarian Enchiladas, they were amazing! Eating vegetarian is pretty healthy so when you want to eat healtier you should definetely try making this!
Let me show you how we did it...
What do you need?
- Red onions
- Kidney beans
- Tomatoes
- Cheese
- Sweet potatofries (sweet potato will do just fine too)
- Tortillas
- Olive oil
- Salt
- Pepper
Start with cutting the Sweet potato fries into little pieces
- Add a little bit of Olive oil to the Sweet potato fries
- Put the Sweet potato fries in the oven for around 20 minutes on 220℃
- While the Fries sit in the oven you can start cutting the vegetables:
- After cutting the Red onion and the tomatoes, rinse the kidney beans.
- Now you can start laying out the tortillas in an oven dish and adding the potato fries, kidney beans, tomatoes and onion on top.
- Throw some cheese on top and put it in the oven for a few minutes untill the dish is how enough for your own liking.
And your Vegetarian Enchiladas are finished!!
(you can put the spare vegetables into a bowl to make a salad on the side...)
