DIY - Simple Smoked Ribs Potato Soup

There is an endless variation of potato soup recipe out there. I'm back with another very simple one that you can make at home without any problems. It's quite easy to do, ready in about one hour and delicious as well.

Ingredients

  • 300 - 400g smoked ribs,
  • 5 big potatoes,
  • 1 medium onion,
  • 2 clove garlic,
  • 3 bay leaves,
  • 1 tsp salt,
  • 1 tbsp paprika powder
  • a few peppercorns
  • vinegar.

Method

Wash the ribs thoroughly. Add water to a pen, add the ribs, onion, garlic, bay leaves, salt, paprika powder and peppercorns.

Cover with a lid and cook till the meat is almost tender. That should take about 45 - 50 minutes.

In the meantime peal the potatoes, cut them into cubes, then add to the soup, cook till it tender.

Suggestions

If you don't like by leaves, you can use pretty much every spice you want, starting from cumin seeds to tarragon, lentils, parsley, oregano etc.

Vinegar is optional, if you like vinegar, you can add a few tbsp.

You can also add sour cream. It makes the soup more delicious an rich.

Instead of ribs you can also use meat or sausages, or ham.

Serving

Serve till it's still hot, with vinegar and sour cream.

This is an easy recipe that can be done in an hour or so with just a few ingredients that can be bought basically everywhere.
