I'm a big fan of Tunisian sandwiches, and I've tried and tasted tons of them, from fricassee to cassecroute tounsi, the staple Tunisian sandwich you find everywhere. I even tried a version of the Tunisian panini!
What I really like about Tunisian sandwiches is that very often the bread is made on the spot, since industrial products are scarce. And it's really nice to be able to eat a real sandwich with homemade bread and real fries (yes, in a hot country, it's hard to find frozen fries, and that's not bad!).
But my favorite (after the fricassee) is still the chapati. I don't like meat very much, that's why I like this sandwich so much. It consists of a flatbread, stuffed with cheese and harissa, omelet, tuna and fries.
Chapati is a real phenomenon in Tunisia, there is a "chapatist" in almost every Tunisian city, and everyone tastes this sandwich quickly prepared and quite light (if you eat without fries of course, but it will no longer be a real chapati. ).
Recipe for 4 sandwiches
INGREDIENTS
Dough :
- 500g of flour
- 2 tbsp olive oil
- 1 sachet of baker's yeast
- salt
Garnish : - 4 eggs
- potatoes
- 4 portions of melted cheese
- Harissa
- tuna
- 4 tbsp minced onion
- 4 tbsp minced parsley
- turmeric
- salt
- frying oil
PREPARATION
- Mix and knead the flour, with the baking powder, oil, 2 tsp of salt and enough water to obtain a very supple and slightly sticky dough (the more supple it is, the softer the cake will be).
- Divide into 4 dough pieces, and let rise in a warm place for about 45-55 minutes.
- Then spread each dough very lightly to give it the shape of a disc 2 cm thick, and cook in a Tunisian tagine or a hot non-stick pan, 5 to 10 minutes on each side.
- Keep warm.
- Wash and cut the potatoes into sticks, sprinkle with turmeric then mix well to soak the fries. Cook in very hot oil until golden brown.
- Season with salt and keep warm.
- Brown 1 tbsp of chopped onion and 1 tbsp of minced parsley with a little olive oil in a hot pan for 2 minutes.
- Add 2 eggs, beaten and salted, and cook the omelet to taste. Keep warm.
- Repeat the operation 3 times with the rest of the ingredients.
- To assemble the chapatis: open the pancakes lengthwise, spread with melted cheese and harissa, garnish with the omelets, add the tuna, the fries, then close the sandwiches.
- Reheat in a pan or oven if necessary, as chapati is eaten hot.
