Here's a recipe for making bacon and split pea soup:
Ingredients:
1 pound split peas
1 onion, chopped
2 cloves garlic, minced
4 cups chicken or vegetable broth
4 cups water
8 slices bacon, diced
1 carrot, chopped
1 celery stalk, chopped
1 bay leaf
1 teaspoon dried thyme
Salt and pepper to taste
Instructions:
Rinse the split peas in a colander and pick out any stones or debris.
In a large pot, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the pot.
Add the chopped onion, garlic, carrot, and celery to the pot and cook until the vegetables are softened, stirring occasionally.
Add the split peas, chicken or vegetable broth, water, bay leaf, and dried thyme to the pot. Stir well.
Bring the soup to a boil, then reduce the heat and simmer for 1-1/2 to 2 hours, or until the split peas are very tender.
Remove the bay leaf from the pot and discard.
Puree the soup using an immersion blender or transfer the soup to a blender and puree in batches until smooth.
