In my six years of experience with healthy nutrition and natural healing the biggest game changers were the plant-based, high-fruit and low-fat approaches.
Several times I experienced skin and digestive issues as well as a foggy brain when including a higher amount of fats from nuts and seeds in my raw meals. But I can comfortably go for a bit of low-fat cooked veggies now and then and still feel vibrant and nourished.
That means for me - a low fat diet provides my body with the best foundation for vitality. The cooked foods I like to include on an occasional basis - carrots, broccoli, cauliflower, sweet potato, pumpkin or others that are not producing excessive mucus. So here comes the carrot sauce recipe - free of added fats
🥕 3 carrots
🥕 1/2 red onion
🥕 2 tomatoes
🥕 2 garlic cloves
🥕 1 thumb ginger
🥕 1/2 thumb turmeric
🥕 1-2 cup fresh parsley
🥕 1/3 tsp Indian curry powder
🥕 Dash of cayenne
🥕 Dash of Himalayan salt
🥕 Some water
- Steam the carrots. Let them cool down a bit.
- Throw them together with all other ingredients into the blender and mix until smooth.
Apart from the carrots which need to be steamed for a creamy texture, you can add any of those ingredients in their raw state for maximum nutritional value. Or you steam it all together, let it cool down and blend it up afterwards. If you want to use the opportunity to make a delicious broth at the same time, put all the ingredients into a pot and add more water. When it starts cooking reduce the temperature and let it simmer for about an hour. Then remove the water, drink it as a broth and use the leftovers for the sauce.
As thick salad sauce, for your zoodles or even over any cooked dishes - this carrot sauce is a real winner.
