Last night there was a get together party at my home. We prepared biryani for our beloved guests. Today I am sharing with you the process of making biryani in details. Biryani is a flavourful and aromatic dish that has a rich taste. Though it is quite lengthy process but homemade food is always more healthier than any restaurant. So you can make this recipe at your home by applying a few steps.

6 | Green Chilli | As per taste |
7 | Egg | 10 egg ( you can take more) |
8 | Saffron | A little |
9 | yogurt/Hung curd | 400gm |
10 | Mustard Oil | 300 gm |
12 | Lemon (juice) | 1 big size |
13 | Black Pepper (Kali mirch) | As per taste |
14 | Bay Leaf | 3 leaf |
15 | Ghee | 200 gm |
16 | Biriyani Masala | 2 pkt |
17 | Turmeric | As per need |
18 | Garam Masala Powder | 2 small pkt |
19 | Chilli Powder | 1 tbsp |
20 | Kewra Water | 3 tbsp |
21 | Rose Water | 3 tbsp |
22 | Mitha Antor | 2 tbsp |
23 | Cucumber(For salad) | 5 big size |
24 | Potato | 10 medium size |
25 | Onion | 10 midium to big size |
26 | Ginger | 100gm |
27 | Garlic | 50-60gm |
28 | Dry Red Chilli | As per taste |
29 | Cumin seed | 50 gm |
30 | Cardamom (green) | 10 piece |
31 | Cardamom (black) | 10 piece |
32 | Clove, Anise Star | A few pieces |
33 | Water | As per required |
34 | Khowa Khir (Solid Thickened Milk) | 150 gm |
Step 1:
At first put some water into a bowl and soak the rice for 40-50 minutes.
Step 2 :
Cut the surface of the chicken by the help of knife like this .....
Step 3 :
Cut the potatoes, Onion, Ginger, Garlic .
Step 4 :
Make a paste of Onion, Ginger, Garlic, Green chilli, Dry Red Chilli, Cumin seeds, black pepper.
Step 5 :
Marinate the chicken with the paste. Add some yogurt and lemon juice and mix well. Then put it aside for some time.
Step 6 :
Then boil the potatoes and eggs and put them aside.
Step 7:
Add Water, Anise Star, cloves, Green cardamom and salt to a pot and bring it to boil. Once it is boiling add the soaked rice in it.
Step 8 :
Once rice is 70% -75% cooked take them out in a stainer and drain the water. The rice will look like this-----
Then set them aside until the layering steps.
Step 9:
Besides cooking the rice you can put the pan on another oven. Add oil in it. Then fry a little the boiled potato and eggs .
Step 10:
Then add some more oil and fry the onions till it turns into brown in colour. Then put it aside .
Step 11 :
Add some more oil. Add black cardamom, bay leaf , cloves , black pepper and put into the hot oil.
Step 12 :
Then pour the marinated chicken and add some salt and red chilli powder and mix well. Then let it cook.
Step 13 :
Cook it well. Then pour some garap mashala on it and it will be ready.
Step 14 :
Take some milk in a bowl and add a little saffron.
Take another bowl and pour 3 spoon kewra water, 3 spoon rose water and 2 spoon Mitha Antor and mix well.
Step 15 :
Place the pot on the oven and heat it. Then add some ghee. Then put it off from the oven.
Step 16 :
Now at the layer of rice, topped that with potatoes, soaked saffron milk, kewra ,rose water. And spread the friend onion on the top.
Step : 17
Now add some more rice on it. Then add the eggs on the rice and add the kewra, rose water , saffron and some fried onion. Also add the khowa khir.
Step 18 :
Add some more rice . Add the pieces of chicken one by one on the layer . Then add the kewra, rose water , saffron and some fried onion again.
Step 19 :
Repeat the same process until all the rice, potatoes, eggs , biriyani mashala, chicken and gravy placed at the layer.
Step 20 :
Then make a dough of flour and put the flour round the pot like this......
Step 21 :
Let it cook in its steam.The procedure is called 'Dum'.
Step 22:
After a few minutes take it off from the oven and serve to enjoy the aromatic- flavourful -delicious and tasty biryani.
