Hello everyone. How are you? I hope you all are well by the grace of God. I'm also doing good. Today I am here to share with you a very interesting recipe . I hope you all will love it.

My Favourite Recipe With Eggplant

In my childhood I was not fond of vegetables , specially I didn't like eggplant or brinjal. My mother tried a lot to create a love in my heart for this vegetable but she failed. After the marriage of my elder brother , one day my sister - in - law prepared a very interesting recipe with this brinjal. But that time I didn't know how she prepared but it tasted very delicious. It was looking like mashesd roasted eggplant but the taste was little different from my mother's recipe. So I was curious to know the recipe. She told me in details about the dish. The recipe is very simple. It does not want much ingredients. So today I am sharing with you the whole recipe in details. I think anyone can make this without much effort.

The Process of Making Mashed Fried Eggplant:-
Step 1

At first you have to cut the eggplants in round in shape.

Then add some salt and turmeric powder with the eggplants.

Step 3

Put the frying pan on the oven and put some oil when the pan becomes hot.

Step 4

Put the round shaped eggplant one by one into the hot oil .

Step 5

Then fry it in low flame and take it off from the pan after frying well.

Step 6

After that put some more oil again in the pan and fry the dry Red chilli and some onion. ( You can fry it before frying the eggplants too.)

Step 7

Then mash the fried eggplants with the fried onion, fried chilli, raw onion, raw chilli, tomato, coriander leaves, a little salt. (I didn't use tomato, coriander leaves, green chilli as these ingredients were not available at our home at that moment)

Ready to Eat

After these Simple process it will be ready to eat with rice or roti.
