Biryani
Biryani is One of my favorite dishes and one of the most popular dishes of the Indo pak subcontinent.
This is a South asian mixed rice dish that originated in the Indo-Pakistani subcontinent.
Today I want to share my special recipe with you.
To create
3 bay leaves, medium dry
1/4 cup red pepper, leaves
1 red pepper / mint raita
1 tablespoon coriander, powder
1 cucumber / vegetable raita
6 cloves of garlic
1 inch ginger
1 green pepper, small
1 lemon
1 tablespoon mint
5 berries, dried
1/2 teaspoon red pepper flakes
1 tomato, small
2 yellow onions, medium
Spices
1 tablespoon lemon juice
Pasta and cereals
1 3/4 cup basmati rice, old long grain
Baking and spices
2 3 inch cinnamon sticks
1 pinch of sugar
6 Cardamom pods, green
4 cardamom, whole black.
1/2 teaspoon lick masala or hot masala
1/8 food color mixed, pale orange
1 teaspoon hot spices
6 3/4 teaspoon kosher salt
1/4 piece nutmeg, powder
1/2 teaspoon black pepper, whole black.
1/2 teaspoon red chilli powder
6 star fennel
1/4 teaspoon turmeric, powder
Oil and vinegar
1 tablespoon lemon juice or vinegar
5 tablespoons neutral vegetable oil
2 tablespoons vegetable oil
Nuts and seeds
1/2 teaspoon cumin, powder
3/4 cumin seeds
Dairy
2 tablespoons ghee
1/2 cup whole milk yogurt, plain
Frozen
Biryani Masala 2 tbsp
Other
1 1/4 lbs bone in, cut up, chicken without skin, clean and extra skin removed
1 tablespoon Kewra Essence (depending on strength)
5-6 whole cloves
