YAM PORRIDGE
Ingredients:
Yam, local spices (Uda, Ozozo) dry Pepper, Ginger, Spinach vegetable. Salt, dry Fish, grounded Crayfish, Maggi seasoning, red Palm Oil and Water.
PREPARATION:
Wash all the ingredients and the Yam. Peel off the outer layers of the yam, wash it again after peeling it to avoid dirt and then cut into sizeable desired pieces.
Pour into your pot, add enough water and place on your gas stove then turn on the heat at this point add salt. Cover your pot.
When it boils to about 5 minutes, get ready to add your spices. But first pound or blend your local spices (uda and ozozo) ginger, pepper with onions and add to the pot. Also add your fish, ozozo, crafish and maggi as its already boiling.
Then cover your pot tightly and allow it to simmer and cook thoroughly so all the ingredients must have penetrated the yam to make it tasty. In about 25 minutes of cooking, bring out 1 or 2 pieces of yam and mash it to smoothness to form paste with Mortar or you can use Blender, then add back to the pot to thicken and form the porridge.
Now add red Palm oil about 3 big spoons depending on the quantity of yam you are cooking and wait to cook for about 3 minutes.
Its time next to wash the Spinach.
Shred the Spinach vegetable and add to your Yam,
turn your yam with the vegetable for proper mixing.
Cover the pot to allow it simmer for next 3 minutes, now bring your Porridge down, the food is ready. Start to dish it out to serve your family. Its best eaten when it is warm.

SPINACH
It is a very healthy vegetable loaded with nutrients and anti-oxidants. It also contains folate, hence pregnant women and lactating mothers need a lot of this. It can also help balance hormones in women especially those looking forward to get pregnant.

ONIONS
Onions contains fiber and folic acid, a B vitamin that helps the body to build healthy new cells. Its an excellent source for cell renewals. Just as it contains different layers. The same way our trillion body cells benefit itself when we take onions to repair, renew and revive itself.
PEPPER
It benefits the stomach to warm the channels. Pepper can help reduce some degenerative diseases. When you add pepper to food its an excellent seasoning too and prevents cold and flu.
SALT
Salt brings out the taste in every food. It is essential for our nerve and muscle function and helps to regulate fluids in the body. Moderate use of salt is very necessary as it benefits the heart too.
RED PALM OIL
Palm oil is an edible vegetable oil used in cooking majorly all food in Nigeria. It’s a source of energy and benefits the eye too as it contains Vitamin A. Red Palm oil brings out the beauty of any food used in cooking it and makes it tasty and delicious too.
LOCAL SPICES (UDA AND OZOZO)
When added to any food its benefits are numerous. It helps to cleanse the intestines of oxidative toxins. It helps for proper detoxification of the body system. Its special taste and aroma is enough to tell you how delicious your meal is and invites people to ask for a dish.
FISH/CRAYFISH
These are excellent source of proteins and vitamins that helps to maintain balance and good for all ages. The smoked fish and Crayfish used for Yam Porridge is an excellent source of minerals and also add taste to the food.
WATER
Water as its commonly said is ‘Life’. For sustaining life, water must be added to cook our food to break down molecules and help to make the food easy to chew, readily absorbed in the intestine and for easy digestion. We cannot cook our yam porridge without adding water.
