Hello friends,

The simple white cake is one of the easiest cake to bake. Usually, I bake it with sand since my family does not own an oven yet. But this time, I discovered that I could not find my sand where I usually place it and so had to think of a way out. As it is always said that necessity is the mother of invention, I resorted to prepare it for the first time without sand and it came out so fine. This recipe can be used for a 9x9 inch cake pan but I used it to bake cupcakes instead.

I will like you to note that, this write-up contains the minutest details on how to bake a simple white cake without an oven or sand.

INGREDIENTSQUANTITY
Simas butter250g
Flour300g
Eggs3
Baking powder10g
Powdered milk50g
White granulated Sugar100g
Strawberry flavor1 tsp
Rum(optional)

N/B: This cake does not follow the 1:1 ratio.

Steps:
Prepare about 4-12 cupcake pans depending on the size of your pot or oven. Get your scale, whisk, mixing bowls, sieve and spatula ready.

Start, by measuring out each quantity on the cooking scale and place them aside.

In a bigger bowl, beat the butter together with three-quarter of the sugar until it gets fluffy and almost white. If you are doing it manually, use the spatula to beat in a circular method. Ensure that you keep stirring it in the same direction. This means that if you are stirring from right to left you have maintain that throughout the baking process and vice-versa.

Crack the eggs and separate the white from its york. Beat the white until it foams then add it to the large mixing bowl with butter. After this, add the remaining 1/3 of sugar to the york and whisk it.

Add it to the big bowl too.

Sieve your flour into a dry bowl then add other dry contents like baking powder and powdered milk. Mix well.

Turn this mix into the large bowl with the wet contents. You can add it little by little until the batter is smooth.

Scoop the batter into the cupcake pans.

As I mentioned earlier, I baked it without sand or oven. To achieve this, place an aluminum pot on medium heat. Place a flat aluminum plate turned upside down in it.

After 5-10 minutes, place a large cake pan inside then drop the cupcake pans into it. It is ready in about 30-45 minutes or when the toothpick comes out clean.

In times past, I observed that when I use a smaller cupcake pan, I will have at least 24 cupcakes. In the last cakes, I used a larger cupcake and larger scoops too. In the end, I got 18 big cupcakes.
