So I prepared my kids favorite meal (Boiled plantain and Egg sauce) for their breakfast and they were so excited.
The process..
Recipes :
Ripe plantain
A pitch of salt
Water for boiling
Sauce Recipes
Fresh tomatoes
Onion
Seasoning cube
Fresh pepper
Vegetable oil
A pitch of salt
Plantain preparation
Preparation time: 10-15mins.
Procedures :
-Wash the plantain and cut into your desire shape and size.
-Put inside cooking pot, pour water to cover the plantain, put a pitch of salt and put on top fire to cook.
-Cook for like 10mins, when it soft and the turn from milky yellow , you know it's ready ( in some cases the skin will open).
-Drain the water from the pot and remove the skin, your plantain is ready to serve.
For sauce
Estimated Time: 7-10mins
Procedures :
-Slice the fresh tomatoes, onion, pepper and set aside.
-Break the eggs and whisk some seconds and keep aside.
-Put the your fry pan on fire and pour the vegetable oil into the hot pan ( like 90- 100ml, depending on the quantity of sauce you want to make).
-Put the chop onion and stir fry for some seconds.
-Pour the fresh tomatoes, pepper into the pan and cover for like 2-3mins.
-Allow the tomatoes to cook . Don't forget to stir the tomatoes per minute to avoid getting burnt.
-When you the tomatoes has cooked (the tomatoes juice has dried out) , put your seasoning cube and stir.
-Next, pour your whisk eggs into the tomatoes sauce and cover it. (Note: Don't stir it immediately).
-Allow it to cook for like 2-3mins before stirring. After stirring, allow it to cook for like 1-2mins, bring it down. Your sauce is ready
Nutritional Value
Plantain and Egg sauce is one of the Nigerian Cuisines. It contains most of the essential nutrients the body need for proper growth. Example :
(1) Fiber: Fiber reduce the risk of developing heart disease, diabetes, constipation and diverticular disease.
(2) Potassium: this regular blood pressure and lower the risk of stroke .
(3) Protein: Helps in regulating the body cells, tissues and organs.
(4) Vitamins; Helps in absorbing calcium, strengthen bones, boost immune system, stimulate health skin and reducing cardiovascular risk.
Conclusion .
Boiled plantain and Egg sauce is a palatable meal that can be eaten any time, be it breakfast, lunch or dinner. It's faster, easier to prepare and has high nutritional Value.
