Yummy yummy is the thought that comes to my mind when am cooking a delicious meal. We all have different types of food we like and enjoy eating and that is what makes us different and unique. Of course every body is unique in their own way. When I am choosing or eating food I like it spicy but not too much especially when it is garri and soup so that the taste will come out. Food have different flavour and different taste, some people may be allergic to a particular kind of food due to the ingredient used and that is why we have variety of food to choose from.
Today in my post I will be sharing the preparation of my favourite soup and food which I always love eating during afternoon periods which is garri and okro soup. The reason why I love this meal garri and soup is because it is the only food in Nigeria that I think that can satisfy me for a long period of time. Apart from that another reason i enjoy this meal is because of the nutrients and the wonderful garnishing that the food comes with. Although this meal in some places are very expensive to afford in restaurants but offers great health benefits.
Okro soup is one of the most common soup eaten by the Igbo's and they often combine okro and Ogbono for a good result and I know this because I am from that tribe. Okro is a very good soup for kids and adult because it contains two major ingredients which are rich in vitamins (okra and fluted pumpkin). Okro soup contains sliced okra fruit, meat, crayfish, seasoning cubes, salt and paper ,etc and they give the best result when combined to cook.
HOW TO PREPARE A DELICIOUS AFRICAN OKRO SOUP
Let's make a delicious pot of nigerian okro soup, the exact way an Igbo man or woman would like to make it. Below are the list of ingredients needed to cook okro soup, you can always increase of decrease depending on the amount of people you are feeding and of course the stomach sizes you are to satisfy.
1 okra
2 kg of meat or chicken
3 crayfish
4 Cameroon pepper
5 maggi
6 salt
7 onion
8 red palm oil
9 ogbono.
These are the ingredients I used in making the soup and now here are the steps.
Step 1
Slice the okro and keep aside in a bowl
Step 2
Wash the chicken and steam it with some spices to taste and keep aside so as to use a little of its water in making the real soup. After that Place your pot on the fire
Step 3
Pour the palm oil into the pot, add onions into the boiling oil and ogbono into the oil and stir very well.
Step 4
After stirring add the stock water of the chicken and allow to boil.
Step 5
After boiling for about two minutes add your okro and stir very well
Step 6
Also allow to boil for two minutes then add your spices such as crayfish, maggi, pepper and salt. Then add your chicken and allow to continue boiling.
Step 7
Lastly add your periwinkle and vegetable and allow to boil for about one minutes and bring down from the fire. Your delicious African okro soup is ready to be served as shown above with either garri, fufu or any other swallow.
