Hello everyone. I hope we are all good. I appreciate @steemkidss for this contest about food, snacks, drinks. I choose to teach on vegetable soup. This soup has different names in Nigeria. The Yoruba tribe calls it Efo Riro, the Igbo tribe calls it Ofe Ugwu, the calabar/Ibibio calls it Edikang Ikong.
This delicacy has a lot of nutritional components that are very good for the body. All the ingredients used in preparing this soup contains nutrients ranging from; calcium, potassium, protein, folic acid, iron, vitamins (A, C and E).
Vegetable leaf (pumpkin leaf) & waterleaf
Crayfish & palm oil
Onions & pepper
Maggi & salt
Periwinkle & dried fish & stockfish
Meat
The ingredients to be used are prepared for usage. From washing, to cutting, to pounding, to boiling.
- Step one: In my pot of cooked meat & stockfish, I put in the crayfish, periwinkle, maggi, salt, onions, palm oil and pepper and stir to cook for few minutes.
- Step two: I add my waterleaf and stir to cook for some minutes.
- Step three: I then add my vegetable leaf and stir and allow it cook for some minutes. And my food is done.
This soup helps to reduce the risk of cancer and fights oxidative stress.
It is good for the protection of the liver.
The vitamins provides healthy skin and hair.
It also boost blood production.
It's good for weight loss.
This soup is enjoyed with all kinds of swallow ranging from cassava flakes, to yam swallow, foo foo, wheat, semovita, oat flour, etc.
