Good day, ladies and gentlemen. How are you doing? I hope everyone is well and healthy. I welcome you all to this weak food challenge #68.

My favorite soup is egusi, and this is how to prepare egusi soup.

Firstly, you need to go to the market and buy egusi or melon, like two to three cups or more, depending on how big or how long you want your food to last. Then the melon will be granted with a grinding engine till it becomes very smooth. Then you buy fish, meat, crayfish, paper Maggie, red oil, salt, and bitter leaves or pumpkin leaves for the soup. These are the basic ingredients you need for the soup.

Then you need to keep your pot very clean, put some glasses of water inside the pot, wash the meat or fish, or both of them, and cook it for like 20 to 30 minutes. Add salt, Maggi, or any other ingredient you have when the meat has become soft to your taste.

You can add red oil, cover the pot, and allow it to boil for a while before adding other ingredients like pepper, crayfish, Maggi, dry fish, and any other ingredients that you want.
Then you cover the pot and allow the ingredients that you put to boil for like 20 to 40 minutes,

then you can now put the leaf of your choice, or bitter leaf, or pumpkin leaf, and you allow it to boil for a while before you can now put the egusi inside the pot and turn it together with other ingredients that you have put inside the pot. Then you cover the pot or allow it to boil for a while, then you will taste the soup and check if it is okay or if you still need to add some other ingredient. If not, the egusi soup is ready for consumption

The benefit of this food is that it contains all the vitamins that you can think of, it makes the body very healthy, and it is a balanced diet.
The soup can be eaten for breakfast, dinner, or dinner, but I mostly eat it for dinner.
