Hello everyone, i hope all is running well with you. I am also fine.
Today I will be creating my native dish, which you should definitely try. I am grateful for the opportunity to introduce our varied meals from different parts of the world. Thank you @steemkids& parents for continuing this series of contest.

I'm offering a simple pumpkin leaf recipe in my style today. Which taste awesome, and carry alot of health benefits.

Pumpkin is one of my favourite crops, and I planted the seeds mostly to appreciate the blooms and, perhaps, the pumpkin during the autumn season.Not only the pumpkin but it's stem and leaves are extremely delicious.

Ingredients for the recipe :

  • Pumpkin leaves
  • Onion
  • Garlic cloves
  • Chilly
  • salt and termuric
  • Oil

Recipe

Let me tell me tell you first, this recipe is very simple, requires very less ingredients and effort, it hardly took 5-6 minutes to cook. First off all In a frying pan add some oil and heat the oil. Then add punchphuran and chilli. Then again add chopped onion. Then Cook off all these ingredients until it releases their flavours.
On other side wash pumpkin vine and leaves throrouly in running water.

Then add pumpkin vines, here you have to add salt as per taste and turmeric powder. Mix it well with the help of spatula. Then
Cover it and steam for 5 minutes, or until the vine tips are wilting. I don't prefer to add other spices in this curry. If you want to add any extra spices and herbs you can add here.
Continue to toss and steam until the vine tips are completely wilted. Because this is summer i prefer to eat tangy flavours. So I have squeezed lemon juice over the curry and mix well. Then switch off the flame. You can skip it. Then it's done.

Health benefits and it consume

Pumpkin shoot or vines , like other leafy vegetables, are high in nutrients.

  • Antioxidants
    These pumpkin shoot vines are high in antioxidants such as beta-carotene (which is also present in pumpkin), flavonoids, and vitamin C. Antioxidants protect our body by combating free radicals, or dangerous chemicals that, when present in large concentrations, can cause cellular damage and increase the risk of chronic diseases such as cancer, diabetes, and hypertension.
  • Minerals and vitamins that are required
    Pumpkin leaves are also high in minerals, such as potassium, which is necessary for muscular contractions, fluid balance, and chemical signalling between neurons (nerve cells). It also helps to ensure that the kidneys, digestive system, and heart are all functioning properly. Calcium and magnesium, which are involved in bone health and muscle function, are also found in pumpkin greens.Furthermore, pumpkin leaves contain a modest yet significant amount of folic acid, also known as vitamin B9.

  • Folic acid can be found in pumpkin leaves and petals, as well as the pumpkin meat itself. It plays a important role for the growth and development of cells and tissues throughout life. It is basically important for proper brain function.

It can be consumed at any time,in breakfast,lunch or dinner.you can pair it with rice or chapati.
