First of all, you have to collect some raw mangoes as needed. It is better if you can collect mangoes from your own tree. And if this is not possible, then you have to collect fresh mangoes from any local market. Mangoes are sour and sweet.
Now clean the mangoes well. After that, cut carefully according to your preference. Be careful not to cut your hands. Separate the mango pulp from the mango. Then it should be cleaned again. So that there is no mango glue. Now take some water in a clean container and put the cut mangoes in it. Now boil it in the oven for some time. Now put the water of the boiled mangoes in a basket. Must embrace.

Now I have taken some masala in a bowl. Such as garlic, bay leaf, cumin, coriander, cardamom, some cinnamon, dry chili etc. I first washed them with water and dried them.
Now, coriander, dry chillies, cumin, cumin should be roasted in the heat of fire. Then all these ingredients should be blandered one by one. Along with garlic and blander should be taken in a separate container. And sugar and salt should be kept with it. Now we will move on to the next task.
Now take oil as required in a dry pan. When the oil is hot, take some amount of garlic paste in it. Then these two ingredients should be fried well. And then stir well with the chopped mangoes boiled in it. So that the oil and garlic mix with all the mangoes.
Add some salt and a little turmeric powder to this mango. You can add turmeric powder as per your choice.
After mixing them together. Now add sugar as needed. If you want to eat sour pickle, then add less sugar. And if you want sweet pickle, add more sugar. I have added less sugar. Because I don't like sweets.
After mixing everything, add the blended masalas. Mix well with all the masalas. Be careful not to stick to the bottom of the pan. If it burns, the pickle will smell bad. It will spoil the taste of the pickle. You have to work with patience.
The pickle is now ready to serve. Before removing the pickle from the oven, do a little test. If there is anything missing, you can fix it immediately.☺️
The pickle was really wonderful to eat. But I couldn't eat it because I was a little sick. You can understand how sick I am when you see me. Doesn't like pickles though.
