THIS EASY AND TASTY DISH COULD SAVE US
Ingredients:
Potatoes
Eggs
Sea and common salt
Oregano
Oilve and vegetable oil
Cheese (optional)
Ketchup, barbecue or Neapolitan sauce (optional)
Garlic or onion (optional)
Preparation:
Wash the potatoes. Peel it (optional). Chop it as you wish. (In my case, type pringles).
In a frying pan, heat a teaspoon of vegetable oil over a high heat for about one minute.
Fry the potatoes in the same high fire without stopping it moving with a wooden spoon for five minutes.
While frying the potatoes add a pinch of sea salt, olive oil, oregano and garlic or onion (optional, I did not use because I don't like onion and garlic on eggs)
Put the fire on medium and cover the frying pan with aluminum foil. Let it cook for five minutes, meanwhile you're supervising it.
While the potatoes are cooking, beat the eggs in a bowl and add a pinch of common salt. Then, add to the potatoes and just wait for a minute.
Lower the fire and let it cook for 2 minutes. Turn off and let it rest for 5 minutes. Always cover the frying pan with aluminum foil.
Serve at once and bon appétit!
IMPORTANT: Depending on the kitchen, the frying pan, the potatoes or the taste of each one, let it cook more or add the beaten eggs to the potatoes. It should be done in a way that covers all the potatoes. When adding the beaten eggs, DO NOT SCREW. Let it flow like water, so that the omelette effect is produced. If it happens, the result is a scrambled egg or as it is called in my country Venezuela: "perico" (later, I will publish this recipe) Do not reheat, it is a dish that should be eaten on the spot for taste and health.
Quantity: I made for two people (my husband and I) and we are of normal appetite. 2 potatoes and 2 eggs per person is fair.
Accompaniment: rice, bread, "Tajadas" (in Venezuela...I'll explain it), salad, pasta or just with a good wine.
It is optional: add parmesan cheese or the one you have and ketchup, barbecue or Neapolitan sauce. In my case, I added Ketchup and parmesan cheese.
Note: once the eggs are added, in a subtle way, with the wooden spoon open a small hole in the center of the omelette, so that it cooks well. Or if you take a chance, with a plastic palette turn it over once it is off, but watch out!
P.S.: There is a great variety of omelettes, this is the most economical, fast, easy and lacto vegetarian option. In my experiences with omelettes or "Tortillas" (as we call it in Spanish) I have even tried tuna that my dad made it, and let me tell you my friends that it is delicious.
